Johnty Tatham produces Lucid chocolate in the Coastal Wairarapa region of New Zealand from a remote farm location. He employs a rigorous bean to bar process using organically sourced cacao from Peru. Tatham roasts the pistachios in his own facility to control the flavor profile and ensure quality throughout each batch, before integrating them with locally sourced ingredients for the filling. The chocolate production focuses on highlighting the intrinsic characteristics of Peruvian cacao through controlled refining and precise roasting and controlled conching processes. This technical approach yields an addictive pistachio bar that celebrates an original vision and local provenance through the expressive medium of Marañón cacao.
